The Idea
Create a sweet dish that would express the singularities and values of the Corsican clementine.
The History
A green olive shortcrust at the base, cut in the shape of a leaf, it’s the color green, the land.
A clementine compote, just seized in its juice, it’s the feeling of freshness characteristic to this citrus fruit.
Laying on top of it, generous and brimful, a spoon of sweet cheese, the conviviality of a region with a strong personality.
As a signature, crowning it all, a slice of dried clementine, it’s the bitterness waking up the taste buds, it’s also a crispy counterpoint showing the fruits transformations richness.
The cake makes eyes at us, eat me if you dare!
