Mix up the codes of the festive meal.
The History
On a suggestion of the journalist Cécile Cau, I thought with Eric Trochon a menu of Christmas Eve which is removed from the context for the weekly magazine VSD.
Log of bundle of sticks: foie gras in log, salsify, lower jaw in the spicy chocolate, the stick of shortbread seeds cookie.
Fragmented capon: half roasted poultry, thigh poached in the broth, gold liver, gizzards asp, bloody beet heart, bréchet à Vœux
Thirteen desserts in the dozen: Madeleine in the barks of crystallized grapefruit, cooked in a shell, oyster crème brulée, flower of salt lower jam and almond pearl.
